Paleo Chicken Nuggets

"Paleo" Chicken NuggetsIngredients:1.5 lbs boneless, skinless chicken breast, cut into nugget shapes2 eggs1/4 cup almond flour3/4 cup unsweetened shredded coconut2-3 T coconut oil1 tsp onion powder1/4 tsp garlic powderAdditional seasonings (I sprinkled in some cumin and curry)Salt and pepperDirections:In a small bowl, mix the eggs, almond flour, onion powder, garlic powder, s/p and any additional herbs or spices. Put the coconut flakes in a different bowl. Take about 5 or 6 nuggets and dip them in the egg/almond flour mixture and then proceed to lightly coat them in the coconut flakes. In a medium-heated skillet, melt 1 T of coconut oil and then place the nuggets in the pan. let them cook for about 5 minutes on each side until the outsides are golden brown. Check to make sure the inside is cooked through on one or two of them before taking them out of the pan. Repeat this same process for all of your chicken nuggets, adding in coconut oil every round as needed. Serve with your favourite dipping sauce (I used this one) and enjoy!How's this for a No.10 meal?These might be my new favourite snack.
