Apple Cinnamon Raisin Muffins
Happy Thursday! Somewhere between my school reading, papers, job interviews, apartment shopping, workouts and social events, I made time for MUFFINS. I’m sorry for my lack of posts but I think this recipe will make up for all of it.
Really.
It’s that good.
Plus I swear I just found the tastiest apple in the entire world- they’re called tentations. Yes, tentation not temptation. Though they might as well be called that. I got mine at HEB though I’ve never even seen them before. Anyways, I recommend them for this recipe.
Full recipe is at the bottom but before we get to that, let’s look at some of my all time favourite foods all hanging out together.
The coconut oil wandered off somewhere. But I got him just in time for the bowl partayyy.
I suggest you chop your apples smaller than this. I goofed up and made them too big so I had to go back and cut a few chunks into tinier pieces.
I promise your house is going to smell heavenly after this.
Somebody invite me somewhere so I can bring these and stop myself from devouring them ALL.
Apple Cinnamon Raisin Muffins
Ingredients:
1/2 cup coconut flour
5 eggs
3/4 cup applesauce
3/4 cup chopped apples, skin on
1/2 cup golden raisins
2 T cinnamon
1 T coconut oil
1-2 T honey
1 tsp vanilla
1 tsp baking soda
Directions:
Preheat oven to 400 degrees. Grease your muffin tin with coconut oil or organic cooking spray. Add eggs, applesauce, honey and vanilla in a bowl. Stir well, then add the rest of the ingredients. Fill muffin tin with the batter and put in the oven for 15-20 minutes or until golden brown (mine were done at 20).
